  • Add vegetables called brinjal, broccoli, French beans, sweet corn and others as per your preference for variation in taste and texture.
  • Mash boiled veggies until it has a texture like that you prefer. your bhaji should have – little chunky or smooth paste.
  • Add a small piece of beetroot along with vegetables while boiling to get the deep red colour of bhaji. Additionally use Kashmiri red chilli powder instead of regular red chilli powder.
  • Garnish the hot bhaji with grated mozzarella cheese to make cheese pav bhaji.
  • The taste of bhaji greatly depends on the butter, so don’t reduce its quantity.
  • In this recipe, we have used Badshah brand readymade pav bhaji masala but you can use any other brand’s masala.

How To Make Pav Bhaji At Home


STEP-1 First of all, heat some water in a pan and cook capsicum in it for about 2 minutes (Capsicum has to be cooked only lightly because the taste of mild raw capsicum is very good).

STEP-2 Now put tomatoes in the pan and mix it well. Let both the things cook well while stirring with a ladle for some time.

STEP-3 Now mash the boiled potatoes, peas and cabbage in it and mix them well.

STEP-4 Cook all the vegetables by stirring them well for some time and then mash them with a masher.

STEP-5 As this mixture gets cooked, it starts thickening so whenever you see it too thick add little water.

STEP-6 Now add red chili powder and turmeric to this mixture and fry well till the turmeric is cooked.

STEP-7 Now add half a glass of water to it and cook for some more time. Now take it out in a separate vessel.

STEP-8 Save some butter for roasting the pav, put the rest of the butter in this pan and heat it.

STEP-9 Now add chopped onion and ginger-garlic paste and fry till the onion turns golden brown. 

STEP-10 After this add Kashmiri red chili powder, pav bhaji masala, kasoori fenugreek and lemon juice and mix well.

STEP-11 Now add the mixture kept aside and stir it well.

STEP-12 Now add salt and green coriander to it, mash it well one more time and then turn off the gas and take it out in a vessel.

STEP-13 Now put the remaining butter in the pan and cut the pav in the middle and fry it in butter from both the sides.

STEP-14 Now take a plate to serve it and keep the fried pav on one side and the vegetables on one side. 

STEP-15 If you want, you can also keep some chopped onions separately as a salad.

STEP-16 Do not forget to put butter on top of the bhaji. Its taste is doubled with butter.

STEP-17 Pav bhaji made in this way looks amazing to eat. Like we eat at a roadside stall.

Recipe For Pav Bhaji In Hindi


STEP-1 सबसे पहले एक पैन में थोड़ा पानी गर्म करें और उसमें शिमला मिर्च को करीब 2 मिनट तक पकाएं (शिमला मिर्च को हल्का ही पकाना है क्योंकि हल्की कच्ची शिमला मिर्च का स्वाद बहुत अच्छा होता है).

STEP-2 अब पैन में टमाटर डालकर अच्छी तरह मिला लें। दोनों चीजों को कलछी से चलाते हुए कुछ देर अच्छे से पकने दें.

STEP-3 अब इसमें उबले हुए आलू, मटर और पत्ता गोभी को मैश करके अच्छी तरह मिला लें.

STEP-4 सभी सब्जियों को कुछ देर अच्छी तरह से चलाते हुए पकाएं और फिर मैशर से मैश कर लें।

STEP-5 जैसे ही यह मिश्रण पक जाता है, यह गाढ़ा होने लगता है इसलिए जब भी आप इसे बहुत गाढ़ा देखें तो थोड़ा पानी डालें।

STEP-6 अब इस मिश्रण में लाल मिर्च पाउडर और हल्दी डालकर अच्छी तरह से हल्दी के पकने तक भूनें.

STEP-7 अब इसमें आधा गिलास पानी डालकर कुछ देर और पकाएं. अब इसे अलग बर्तन में निकाल लें।

STEP-8 पाव भूनने के लिए थोडा़ सा मक्खन बचा कर रखिये, बचा हुआ मक्खन इसी पैन में डाल कर गरम कर लीजिये.

STEP-9 अब इसमें कटा हुआ प्याज और अदरक-लहसुन का पेस्ट डालकर प्याज को सुनहरा होने तक भूनें. - इसके बाद कश्मीरी लाल मिर्च पाउडर, पाव भाजी मसाला, कसूरी मेथी और नींबू का रस डालकर अच्छी तरह मिला लें.

STEP-10 अब एक तरफ रखे हुए मिश्रण को डालकर अच्छी तरह मिला लें।

STEP-11 अब इसमें नमक और हरा धनियां डालकर अच्छी तरह से एक बार मैश कर लें और फिर गैस बंद कर दें और एक बर्तन में निकाल लें.

STEP-12 अब बचा हुआ मक्खन पैन में डालें और पाव को बीच में से काट कर मक्खन में दोनों तरफ से सेक लें।

STEP-13 अब इसे परोसने के लिए एक प्लेट लें और एक तरफ तले हुए पाव और एक तरफ सब्जियां रख दें. आप चाहें तो कुछ कटे हुए प्याज को अलग से सलाद के तौर पर भी रख सकते हैं.

STEP-14 भाजी के ऊपर मक्खन लगाना ना भूलें. मक्खन से इसका स्वाद दोगुना हो जाता है।

STEP-15 इस तरह से बनी पाव भाजी खाने में लाजवाब लगती है. जैसे हम सड़क किनारे किसी स्टॉल पर खाते हैं।

STEP-16 अब यह गरमा गरम मुंबईया पाव भाजी बनकर तैयार है. आप भी खाएं और अपने बच्चों और मेहमानों को भी खिलाएं।
